The Aqua dining room is the most requested room at The Penthouse. Ocean in every window, eighteen floors up. We have never opened it for a private experience. On Thursday, August 27, we are opening it for one.

PATRIMONY Estate joins us for a five course dinner built by Executive Chef Jōb Carder, with five allocated wines poured alongside representatives from the estate.

The evening begins at six with a tray passed Petrossian Caviar reception in the Sunset Lounge, before guests move into Aqua Dining Room for dinner.


The Estate

PATRIMONY Estate sits on DAOU Mountain in the Adelaida District of Paso Robles at 2,000 feet of elevation and roughly fourteen miles from the Pacific. Brothers Daniel and Georges Daou spent years searching California for calcareous clay soils that behave the way Bordeaux behaves. They found them here.

What the mountain gives them is fruit with high phenolics, the compounds behind color, structure and texture. The wines that follow are Bordeaux varietals with real power that never trade away acidity or freshness. They are made in very small quantities and released by allocation, with a waitlist. Five of them are being poured on August 27.

The Wines

2023 PATRIMONY Blanc
Sauvignon Blanc and Semillon aged fourteen months in French oak, which is not how most California whites are made. It gives this one the weight to sit beside lobster and the acidity to cut cumin whipped ricotta. Honeysuckle and stone fruit up front, apricot and orange zest across the palate, wet stone running underneath all of it.

2022 PATRIMONY Merlot
Merlot grown on the same mountain as the Cabernet, which means structure rather than softness. Dark and plush with a savory core, and enough grip to hold its own against summer truffle, aged Parmigiano and toasted hazelnut.

2022 PATRIMONY Cabernet Franc
Red plum and raspberry over black tea, graphite and the herbal snap that makes Cabernet Franc what it is. Blackberry and smoked meat on the palate, with acidity that lifts the whole thing. Poured with the duck for the currant gastrique and the pickled black cherries.

2022 PATRIMONY Cabernet Sauvignon
One hundred percent Cabernet Sauvignon, thirty months in new French oak. Red currant, cherry preserve, tobacco leaf and star anise, with lavender and sagebrush behind them. The palate runs to blueberry, baking spice, smoked meat and salted dark chocolate. This is the wine the fourteen day dry aged filet and the kombu bordelaise were written for.

2021 PATRIMONY Caves des Lions
Sixty five percent Cabernet Sauvignon, thirty five percent Cabernet Franc. Plum, blackberry, licorice, cedarwood and wet stone resolving into chocolate, pomegranate, tobacco and graphite. Set against a chocolate crémeux and cassis confit, it reads less as a pairing than as a mirror.
